Jeff, our brother-in-law, shot a small feral hog just before heading back home. Since we were staying at the ranch, he gave us the pig to do as we wished with.
Travis decided cook the pig in the smoker. Since it was small enough, the whole thing fit in there easily. We seasoned the meat with a dry rub, created a mop, and smoked the meat for hours.
Eventually, it was time to eat! We really kept things simple: we put the whole hog on a cutting board and cut the meat right from the pig. We ate it in tortillas, with all of the fixings.
Obviously the two of us couldn’t eat the whole thing! There will be lots of delicious leftovers in our future 🙂
