I discovered Hainanese Chicken Rice when I was in Malaysia back in 2005. While it is a very simple dish, it is also very difficult to find a good version of it. It is also the type of food that also impossible to make at home, because one of the secret is master stock, which no one can have without running a restaurant (unless willing to sacrifice flavour, and then, what would be the point?).
We found a street food stall right across the street from our hostel selling the dish, and it was really good. What a great way to start the day!
